The Perfect Autumnal Cupcake

The weathers turning colder, the mornings are crispy and cold and the leaves are turning all the gorgeous shades of autumn. I love autumn for soooo many reasons, especially the fact I get to do so much more autumnal baking using all my favourite spices - I'm talking cinnamon, ginger and a whole heap of mixed spice! For my first fall bake of the year I made these cinnamon-and-apple cupcakes with a golden syrup drizzle!

So quick disclaimer, my recipe's are not the best. I don't tend to stick to recipe's normally so this one is not completely exact and parts are definitely for you to interpret depending on how large you want your cupcakes to be, how strong you want the spices to be and how much apple you would like inside them (if at all). SORRY I'M NOT MARY BERRY OKAY?

Ingredients (makes 16-20 depending on your size):
8oz Self-raising Flour
8oz Unsalted Butter
8oz Granulated Sugar
4 Medium Eggs
2-3 Large Apples
A Splash Of Milk
A Pinch Of Salt
Golden Syrup
Mixed Spice


  1. Peel 2-3 large apples and remove the core
  2. Chop the apple into small pieces
  3. Place a small piece of butter into a pan and place onto the heat
  4. When the butter is melted add in the apples with a large table spoon of sugar, small splash of water and table spoon of golden syrup
  5. Cook the apples until soft and caramelised and allow the apples to cool
  6. Cream together the butter and sugar in a large mixing bowl
  7. Beat the eggs gently in a small bowl
  8. Sift the flour, small pinch of salt, cinnamon, mixed spice and ginger together (the quantities of spices will vary depending on what kind of flavour you're looking for)
  9. Pour the beaten eggs and the flour into the main mixing bowl
  10. Mix the sugar, butter, flour and eggs together
  11. Add in a splash of milk and mix
  12. Fold in the apples gently
  13. Spoon the final mixture into cupcake cases
  14. Bake until a golden brown and stab a toothpick through the centre to make sure they are fully baked
  15. After the cupcakes have cooled, use a fork or toothpick to stab small holes through the cupcake. Using these small holes drizzle golden syrup over the cupcakes and hopefully (fingers crossed) the golden syrup will drizzle all through the cupcake.


Annnnnd that's my perfect autumnal cupcake recipe! I promise they're yummmmmy (if I do say so myself) and of course, if you would like to add icing or butter cream instead of my apple, caramel drizzle GO AHEAD!

I think I'd have to choose the frozen tundra, because I'd probably be bitten to death by bugs in a tropical rainforest! // Ooh I have a sweater similar to that yellow one, but mine's from Madewell!
