Honey and Spice Christmas Cookies

IT'S CHRISTMAS AND I'M OFFICIALLY HUNGRY

More than just a classically festive gingerbread, these Christmas cookies have a special festive spice mix and are dipped in gorgeous dark chocolate. This recipe is super simple to make - even I can make it. And that's saying something. 
PS: I know you're drooling.

INGREDIENTS
400g plain flour
100g golden caster sugar
2 tbsp honey
200g butter
1 beaten egg
2 tbsp festive spice
Melted dark chocolate
Half a tsp cream of tartar

METHOD
  1. Preheat the oven to 180C/160 fan/gas mark 4
  2. Rub the butter into the flour in a large bowl until you have crumbs that resemble breadcrumbs
  3. Stir in the beaten egg
  4. Add the festive spice, golden caster sugar, honey and cream of tartar
  5. Stir until a soft dough forms
  6. Wrap in cling film
  7. Chill for 20-30 minutes
  8. Roll out the dough
  9. Cut into festive shape using cookie cutters
  10. Prepare lined baking trays
  11. Bake for 10-12 minutes until golden brown
  12. Drip in meted dark chocolate
  13. Serve and enjoy!
